Stéphane took 800 low-yielding, more or less abandoned olive trees in Moustiers and nursed them back to health.
Today, thanks to Stéphane’s patience and hard work, he has succeeded in producing an excellent olive oil that has a distinctive flavour due to the fact that these olive trees grow at over 600m altitude. He also makes lemon olive oil (by crushing lemon with olives) as well as an organic balsamic glaze.
Having met this wonderful challenge with such success, Stéphane plans to keep nurturing the olive trees and thus continue developing the production of local organic olive oil.
